Stuffed Pork Loin
Stuffed with figs and dates drizzled with a zesty raspberry chipotle sauce, giving the pork a sweet taste with a hint of chipotle sizzle. The perpect essence to bring out the flavor of the loin.

Boston Pulled Pork
I use the Boston Butt cut which is actually from the upper portion of the shoulder, not the butt (ham). The Boston Butt is exceptionally tender and marbled with loads of flavor. Slow cooked for 6 to 8 hours and seasoned to perfection.

Tri Tip
The pride of Central California, Tri Tip comes from the bottom (“tip”) of the sirloin. Its name is after the triangle shape and is a lean, extremely tender and flavorful cut served in a zesty raspberry chipotle sauce. The chipotle sauce is very mild.

Grilled Cap Steak
Ribeye steaks are cut from whole rib roasts with the Cap being the most prized portion of the cut. Rich and juicy, the ribeye cap steak is exceptionally marbled with a unique, melt-in-your-mouth texture. Seared at over 600°, it is the perfect texture.
I challenge the Filet Mignons, Porterhouse/ New York, or regular ribeye to stand next to my Cap!

Butterflied Steaks
Your choice of USDA Prime cut Filet Mignon, Ribeye, or New York, grilled on the BBQ, butterflied, and stuffed with goat, feta, or blue cheese. Smothered in marinated mushroom sauce, it makes for a very unique twist on the traditional steak.

Baked Rigatoni with ground sirloin, NY spivy sausage, and mushrooms in a homemade ragu style San Marzano tomato sauce. Your choice of additional ingredients may be added or removed.

Stuffed Conchiglie
Pronounced "konˈkiːljeɪ", I stuff my shells with my own blend of fresh spinach, artichoke, ricotta cheese, and a slightly spicy New York Italian sausage. Covered in a light bolognese style sauce, surrounded by organic vegetables and baked to a crispy provolone and goat cheese encrustment.

Tamale Fiesta
Definitely a customer favorite for buffet style serving. A combination of red pork and/or green chili cheese tamales, served with refried beans, and Spanish rice.
My unique rice is derived by inspirations from my Costa Rican godmother, Dora and my Mexican grandmother Anita. My Spanish rice tribute to them is over-the-top.

Enchilada Bar
Unlike traditional individually rolled enchiladas, mine features corn tortillas layered with mashed black beans, shredded chicken, cheese, and smothered in a Hatch green enchilada sauce. (Think Mexican Lasagna)
Served with a unique vegetable Spanish rice, and refried vegetarian beans.

Chili Mac
Don't let the generic sound of this entrée shun you from this dish. First of all, it is my out-of-this-world homemade chili that stews for 5 hours. Later added to large elbow macaroni, and finally tossed with an abundance of Tillamook Sharp Cheddar cheese from Oregon.
The heat can be customized from mild to crazy spicy. How spicy? My last name is Gómez, any questions? ¡Andale!

The Ultimate Burger Bar
Build your own burger (1/4 lb sirloin meat, chicken, or plant-based product) with every fresh ingredient you can possibly imagine.
Starting with your choice of Tillamook cheeses, organic tomatoes, Vidalia or Maui sweet onions, mushrooms, fresh guacamole, hand torn crispy lettuce, bacon, mild Hatch chiles, and even the original Bob's Big Boy dressing. (Anyone remember Bob's Big Boy?)

Smoked Gouda Mac n Chez
This is TO DIE FOR! Completely made from scratch with the best available ingrediants, the aged 12 year smoked gouda engages well with the Tillamook aged sharp cheddar. Add pepper bacon and mild Hatch green chilies, all broiled to a cruispy top make this the best Mac n' Chez you will ever have.
